Karim’s Entally Revives Old Calcutta’s Mughlai Legacy with Heritage Menu Launch

Kolkata: Karim’s Entally Restaurant, one of the city’s most trusted names for authentic Mughlai cuisine, has unveiled a new heritage menu that brings back the lost flavours of old Calcutta. The launch event was graced by actor Darshana Banik, who relished the delicacies and praised the biryani for its light yet rich taste, calling it “a beautiful reminder of the city’s food legacy.”

Carrying forward the legacy of Karim’s, founded in Delhi in 1913 by Haji Karim Uddin, the Entally branch has been serving Kolkata for the past seven years. With this menu, the restaurant aims to revive the traditional recipes and methods that once defined Calcutta’s food culture.

To ensure authenticity, Karim’s has engaged retired bawarchis from the city’s legendary kitchens to train the team. Their expertise has helped restore the old Calcutta style of biryani, slowly cooked on dum, where rice, meat, and potatoes harmoniously absorb each other’s flavours. Unlike today’s masala-heavy styles, this method highlights natural infusions—the richness of ghee, sweetness of milk and cream, and the subtle tang of curd and aloo Bukhara—creating a unique balance of sweet, sour, and spicy.

“Our cooking is not about excessive spices but about the origin and quality of every ingredient. We want diners to experience Calcutta’s food culture from 40–50 years ago,” said Md Aurangzeb, Co-Franchise Owner & Strategy Partner, Karim’s Entally.

Echoing this, Eqbal Alam, Co-Franchise Owner & Operations Partner, added: “Bringing in the old and retired bawarchis to guide our kitchen has been the most fulfilling step in keeping Mughlai food legacy alive for future generations.”

New Party Area & Catering Expansion

Alongside the menu launch, Karim’s Entally announced the opening of a new party area within the same premises. The space can host up to 120 guests (96 seated), making it ideal for family gatherings, events, and celebrations. Packages begin at ₹999 + GST per person, covering venue, service, décor, cutlery, and food. Catering services will also extend from this facility, ensuring greater convenience for customers.

With this launch, Karim’s Entally not only honours the city’s culinary heritage but also creates a platform where new memories can be made over timeless recipes.
